  • 1/2 pound fresh shrimp peeled and deveined
  • 1/4 pound Chinese barbecue pork cut into thin strips
  • 2 cups soaked rice noodles
  • 2 tablespoons oil divided
  • 2 eggs beaten
  • 1/2 small Napa cabbage chopped
  • 1 carrot julienned
  • 1 small red bell pepper slice thin
  • 1/2 onion sliced thin
  • 3 dried red chili peppers
  • 11/2 tablespoons curry powder
  • 2 teaspoons salt
  • 1 tablespoon Chinese rice wine
  • 1/2 teaspoon sesame oil
  • 1/2 tablespoon soy sauce
  • Pinch white pepper
  • 1 green onion sliced into thin strips

Instructions

  • Rinse shrimp and pat dry with paper towels. Set aside.
  • Soak rice noodles in cold water for twenty minutes. Drain and cut into 7 to 8-inch lengths. Set aside.
  • Heat a little oil in a wok then add egg. Swirl all over the wok and cook until egg sets. Transfer to a plate and cut into strips. Set aside.
  • Heat remaining oil in same wok over medium-high heat. Add shrimp and stir-fry for about 30 seconds.
  • Add dried chili peppers, carrot, Napa cabbage, bell pepper, and onion and stir-fry for about 30 seconds more. Sprinkle curry powder evenly all over the mixture.
  • Add rice noodles and pork, salt, and rice wine and mix from the bottom up to make sure noodles don’t stick to the wok. This also ensures that curry is distributed evenly, so noodles end up in the same color.

Cooking Tips

Singapore Noodles Mei Fun

Creating the perfect Singapore Noodles Mei Fun is a culinary adventure, a dance of flavors and textures that come together to create a symphony on your palate. Here are some tips that I’ve gathered over the years, each one a stepping stone towards mastering this delightful dish.

  • Choosing the Right Noodles: The soul of Singapore Noodles Mei Fun lies in its noodles. Traditional thin rice noodles, also known as Mei Fun, are my go-to choice. Their delicate texture and ability to soak up the flavors make them the ideal base for our dish. If you can’t find these, don’t fret! Regular rice noodles can work just as well.
  • Preparing the Shrimp: Freshness is key when it comes to shrimp. Ensure that your shrimp is fresh and properly cleaned. Also, remember to cook the shrimp just until it’s done to avoid overcooking. Overcooked shrimp can become tough and lose its delicate flavor.
  • Balancing the Flavors: Singapore Noodles Mei Fun is all about balance. The sweetness of the shrimp, the savoriness of the soy sauce, and the heat from the curry powder should all complement each other without overpowering.
  • The Order of Ingredients: When stir-frying, always add the ingredients that take longer to cook first. This usually means the shrimp goes in before the vegetables. This way, everything finishes cooking at the same time, and nothing ends up over or undercooked.
  • Sauce Matters: The sauce is what brings everything together. It should be a balance of sweet, salty, and umami flavors. Soy sauce, oyster sauce, and a touch of sugar usually do the trick. Don’t forget a dash of sesame oil for that extra depth of flavor.
  • Freshness is Key: Use fresh ingredients whenever possible. Fresh vegetables retain their crunch and color better than frozen ones, and fresh shrimp has a superior taste and texture.
  • Garnish Generously: Never underestimate the power of a good garnish. A sprinkle of sesame seeds or a handful of chopped scallions can add an extra layer of flavor and make your Singapore Noodles Mei Fun look restaurant-worthy.
  • Mastering the Stir-Fry Technique: Stir-frying is a quick cooking method that requires constant stirring to ensure even cooking and prevent burning. Make sure your pan is hot enough before adding the ingredients, and keep them moving around the pan for best results.
  • Don’t Overcrowd the Pan: When stir-frying, it’s important not to overcrowd the pan. Too many ingredients can lower the temperature of the pan and cause the food to steam instead of fry. If necessary, cook in batches to maintain the high heat needed for a good stir-fry.
  • Experiment with Spices: While curry powder is a traditional spice in Singapore Noodles Mei Fun, don’t be afraid to experiment with other spices. Turmeric, cumin, or coriander can all add interesting flavor profiles to the dish.

Remember, cooking is as much about the journey as it is about the destination. So, take your time, experiment with these tips, and most importantly, have fun! After all, the best Singapore Noodles Mei Fun is the one made with love.

The Best Way to Serve Singapore Noodles Mei Fun

Singapore Noodles Mei Fun

Serving Singapore Noodles Mei Fun is not just about transferring the dish from the wok to the plate. It’s a culinary experience, an opportunity to showcase the harmony of flavors and textures that you’ve meticulously crafted. Here’s how I like to serve this delightful dish:

  • Choose the Right Dish: A large, open dish or a shallow bowl works best for serving Singapore Noodles Mei Fun. The wide surface area allows the colorful ingredients to be spread out and displayed, making the dish as visually appealing as it is delicious.
  • Presentation Matters: When transferring the Singapore Noodles Mei Fun to the serving dish, don’t just dump it in. Use tongs or a large fork and spoon to gently lift and place the noodles, ensuring that the shrimp and vegetables are evenly distributed. This way, every serving will have a good mix of noodles, shrimp, and vegetables.
  • Garnish Generously: Garnishing is the final touch that can elevate your Singapore Noodles Mei Fun from good to great. A sprinkle of toasted sesame seeds adds a nutty flavor and a subtle crunch, while freshly chopped scallions bring a pop of color and a burst of freshness.
  • Serve Immediately: Singapore Noodles Mei Fun is best served hot, right off the stove. The heat intensifies the aroma and flavors, making the dish even more enticing.
  • Accompaniments: While Singapore Noodles Mei Fun is a complete meal in itself, you can pair it with some egg rolls or wonton soup for a full-on Chinese feast. For those who like a bit of heat, a side of chili oil or Sriracha sauce can be provided.
  • Set the Scene: Serving Singapore Noodles Mei Fun is also about creating an atmosphere. Set the table with some nice dinnerware, light some candles, play some soft music in the background. These little details can enhance the dining experience and make the meal even more enjoyable.
  • Personal Touch: Lastly, add a personal touch to your serving. Maybe it’s a special serving dish passed down through generations, or a unique garnish that you love. This personal touch can make the meal even more special and memorable.
