Ingredients
  

  • 6 cups chicken broth
  • 2 tablespoons cornstarch
  • 2 eggs beaten
  • Chopped green onion to garnish optional
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • Add chicken broth to a soup pot, and heat to boiling.
  • Season broth as desired with salt and pepper.
  • While broth is boiling, mix cornstarch with enough cold water to thoroughly dissolve.
  • Add cornstarch to broth, stirring to incorporate.
  • Reduce heat, and let broth simmer for 5-10 minutes.
  • Remove broth from heat source and let cool down slightly for approximately five minutes.
  • Stir soup in a constant circular direction, creating a bit of a current in the liquid.
  • Slowly drizzle the beaten eggs into the soup, allowing the eggs to cook in thin papery strips. Eggs will cook almost immediately on contact with the broth. To avoid clumping of cooked eggs, make sure there is movement in the broth and that the egg is not poured in too quickly.
  • Serve immediately, garnished with green onion if desired
