Ingredients
  

  • 1 pound chicken thigh fillets chopped into 1-inch pieces
  • 2 teaspoons baking soda

Sauce:

  • 3 tablespoons soy sauce
  • 3 tablespoons dry sherry
  • 3 tablespoons oyster sauce
  • 2 teaspoons sesame oil
  • Dash white pepper

Other ingredients

  • 1 tablespoon cornstarch
  • 6 tablespoons water
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1/2 yellow onion chopped into 1/3-inch pieces
  • 1/2 small green bell pepper chopped into 1/3-inch pieces
  • 1/2 small red bell pepper chopped into 1/3-inch pieces
  • 1 cup roasted cashews

Instructions
 

  • In a bowl, tenderize chicken by coating it evenly on all sides with baking soda. Marinate for about 15 minutes then transfer into a colander and run under tap water to rinse. Use paper towels to pat off any excess water.
  • Prepare the sauce by shaking the ingredients together in any container with a tight seal. Take about 3 tablespoons and add it to a different bowl. Set aside the rest. Add chicken to sauce and mix together until evenly coated. Marinate for about 20 minutes.
  • Add cornstarch and water to the rest of the sauce, cover, and shake well.
  • Preheat a heavy pan over medium-high heat and add oil. Sauté garlic for 15 seconds, then toss in onion and stir-fry for another minute. Mix in chicken and bell peppers then cook for 2 minutes or until chicken changes color but not cooked through.
  • Add sauce and bring to a simmer. Cook for about 2 or 3 minutes or until sauce turns thick and chicken is fully cooked.
  • Remove from heat. Mix in cashews and serve.
