Ingredients
  

  • Sauce:
  • 1/4 cup chicken broth
  • 1 tablespoon chili garlic sauce
  • 1 tablespoon tomato paste
  • 2 teaspoons soy sauce
  • 1 teaspoon sugar
  • Coating:
  • 1 egg
  • 1/4 cup cornstarch
  • 2 chicken breasts boneless and skinless, chopped into 1-inch pieces
  • Oil for frying
  • 1 tablespoon olive oil
  • 2 cloves garlic finely chopped
  • 1/2 cup scallions chopped
  • Sesame seeds for garnish
  • White rice for serving

Instructions
 

  • Preheat deep fryer to 375 °F.
  • Mix all the ingredients for the sauce in a bowl. Set aside.
  • In another bowl, combine ingredients for the coating. Stir well until smooth. Dip chicken pieces and coat evenly on all sides. Set aside for 10 minutes.
  • Working in batches, cook chicken pieces in deep fryer until golden brown and internal temperature reaches 165 °F. Transfer onto a plate lined with paper towels.
  • Preheat a large pan and add about 1 tablespoon oil. Sauté garlic for 10 seconds then add in sauce. Simmer for 5 minutes.
  • Put cooked chicken in a serving bowl. Add sauce and toss with chicken to coat. Garnish with scallions.
  • Serve over white rice. Sprinkle sesame seeds if desired.
