Ingredients
  

  • 1 pound pork tenderloin fat trimmed, sliced thin
  • 1/4 cup all-purpose flour
  • 1/4 cup chicken broth
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon dry sherry
  • 1/2 teaspoon ground ginger
  • 2 tablespoons vegetable oil divided
  • 2 cups bok choy finely chopped
  • 1 cup bean sprouts
  • 1 cup celery diced
  • 1 cup red bell pepper sliced
  • 1 cup mushrooms sliced
  • 1 can water chestnuts sliced
  • 2 garlic cloves finely chopped

Instructions
 

  • Add pork and flour in a Ziploc bag. Seal, and massage using fingers to coat pork evenly.
  • In a bowl, add broth, soy sauce, cornstarch, sherry, and ginger. Mix until well-blended. Set aside.
  • Heat a pan over medium-high heat and add 1 tablespoon oil. Wait for oil to get hot, then cook pork for about 3 minutes or until brown. Remove from pan and set aside but keep warm.
  • Heat rest of the oil in pan and sauté bok choy, celery, red pepper, mushrooms, water chestnuts, and garlic for 3 minutes. Then, mix in pork and chicken broth mixture. Simmer for about 1 minute or until sauce thickens. Add bean sprouts, stir a few times, remove from heat, and serve.
