Equipment

Ingredients
  

Marinade:

  • 1 tablespoon soy sauce
  • 1 tablespoon Chinese rice wine
  • 1 teaspoon cornstarch
  • 1/2 teaspoon toasted sesame oil

Sauce:

  • 1/4 cup chicken broth
  • 2 tablespoons hot chili oil
  • 4 teaspoons dark soy sauce
  • 1/4 teaspoon sugar
  • 1/8 teaspoon ground black pepper
  • 4 teaspoons soy sauce
  • 2 teaspoons sesame oil

Other ingredients

  • 1 pork tenderloin about 1 to 1 1/2 pounds, trimmed and hand minced
  • Water enough to boil
  • 12 ounces Chinese flat noodles
  • 11/2 tablespoons canola oil
  • 3 tablespoons peanuts sliced
  • 3 scallions chopped
  • 1/2 cup English cucumber julienne
  • 1/2 cup bean sprouts

Instructions
 

  • Mix together marinade ingredients in a bowl. Add pork and toss to coat evenly on all sides. Set aside in refrigerator for at least 1 hour.
  • In another bowl, add sauce ingredients. Mix together until blended well.
  • Once pork has been marinating for about 50 minutes, boil water in a large pot. Drop in snow peas and cook for about 30 seconds or until bright green and still crispy. Transfer peas to a strainer and run cold water over them. Cook noodles in boiling water following the instructions on the package. Drain, then rinse. Set aside.
  • Heat oil in a large cast iron pan over high heat. Make sure to spread the oil for an even coat. When oil is hot, add minced pork. While stirring, cook pork for about 2 minutes or until cooked thoroughly. Remove from heat, then toss in noodles until combined.
  • Remove everything from pan and place in a serving dish. Stir sauce, then drizzle over noodles. Garnish with peanuts, and scallions. Garnish with julienned cucumber and bean sprouts on the side.
