Ingredients
  

  • 2 tablespoons canola oil divided
  • 1 pound fresh shrimp peeled and deveined
  • 3 cups snow peas trimmed
  • 8 ounces mushrooms sliced
  • 2- inch piece ginger minced
  • 1/4 cup dry sherry
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 2 teaspoons cornstarch
  • 1/2 teaspoon freshly ground pepper
  • 3 cups mung bean sprouts

Instructions
 

  • Heat oil in a wok over high heat. Add shrimp and cook until it begins to curl and turns pink, about 40 seconds. Transfer shrimp to a plate.
  • Heat remaining oil in the same wok. Add snow peas, mushrooms, and ginger and cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
  • Whisk sherry, hoisin, soy sauce, cornstarch, and pepper in a small bowl.
  • Add in bean sprouts and sherry mixture to wok, then add back shrimp. Cook, stirring constantly, until sauce thickens and shrimp is cooked through, about 2 minutes.
  • Serve immediately.
