Equipment

  • 1 wok

Ingredients
  

  • 3 eggs beaten
  • 3 cloves garlic crushed and minced
  • 2- inch piece of ginger peeled and grated
  • 1 bunch green onions chopped, greens and whites separated
  • 1/4 pound cooked crumbled bacon or pork
  • 3 tablespoons soy sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 cups cooked long grain rice
  • 2 tablespoons peanut or other preferred oil

Instructions
 

  • Warm the wok on medium-high heat. Add 1 tablespoon oil to the hot wok, and quickly scramble eggs, cutting into small pieces while cooking. Remove eggs from pan and set aside.
  • Add the remaining oil to the pan and then add garlic, ginger, green onions, and pork. Toss gently until fragrant, approximately 1 minute. Season with the salt and the pepper.
  • Add rice to pan, tossing with garlic mixture to evenly incorporate and toast rice.
  • Add soy sauce and eggs to rice mixture, toss gently while cooking for 1 minute.
  • Serve immediately.

For best results, cook rice a day ahead of time or use left over rice.
