1bunch green onionschopped, greens and whites separated
1/4poundcooked crumbled bacon or pork
3tablespoonssoy sauce
1/2teaspoonsalt
1/2teaspoonpepper
8cupscooked long grain rice
2tablespoonspeanutor other preferred oil
Instructions
Warm the wok on medium-high heat. Add 1 tablespoon oil to the hot wok, and quickly scramble eggs, cutting into small pieces while cooking. Remove eggs from pan and set aside.
Add the remaining oil to the pan and then add garlic, ginger, green onions, and pork. Toss gently until fragrant, approximately 1 minute. Season with the salt and the pepper.
Add rice to pan, tossing with garlic mixture to evenly incorporate and toast rice.
Add soy sauce and eggs to rice mixture, toss gently while cooking for 1 minute.
Serve immediately.
