Ingredients
  

  • 3 chicken breasts cooked and shredded
  • 3 cups cooked rice
  • 2 tablespoons sesame oil
  • 1 small white onion diced
  • 1 cup frozen peas and carrots thawed
  • 3 tablespoons soy sauce
  • 2 eggs beaten
  • 2 tablespoons scallions finely chopped

Instructions
 

  • Heat oil on a large pan. Sauté onion, peas, and carrots until slightly soft. Move to the side of pan then scramble eggs on the opposite side. Mix together once eggs are cooked.
  • Add rice and chicken to the pan, then drizzle soy sauce over everything. Stir-fry mixture until thoroughly heated and well-mixed.
  • Garnish with scallions.
