Ingredients
  

  • 41/2 teaspoons unflavored gelatin
  • 1/2 cup water
  • 2 cups mango puree about 4 to 6 mangoes
  • 1 14- ounce can sweet condensed milk
  • 4 tablespoons lime juice
  • Whipped cream and mango chunks for garnish if desired

Instructions
 

  • In a small bowl filled with water, add gelatin. Wait for about 1 minute or until softened. Then, microwave bowl with mixture for about 15 seconds or until gelatin is fully dissolved, but the mixture is not boiling. Stir until well blended and flat.
  • Combine mango puree, condensed milk, and lime juice in a bowl. Stir in gelatin mixture until well blended.
  • Apply a light coat of cooking spray to the insides of eight small ramekins. Pour mango mixture evenly between the ramequins. Keep refrigerated for about 2 hours or until puddings set.
  • Loosen puddings by running a knife around where the pudding touches the ramekin. Then, place ramekin in a bowl of hot water for about 30 seconds. Carefully invert pudding onto a serving plate.
  • If desired, top with whip cream and a mango chunk. Serve immediately.

To create a silky-smooth pudding base, combine milk, sugar, and gelatin in a saucepan. Heat the mixture over low heat, stirring constantly until the sugar and gelatin dissolve completely.
