Ingredients
  

  • 8 ounces medium shrimp peeled and deveined

For soaking

  • 1 teaspoon sugar
  • 1/8 teaspoon baking soda
  • 1/4 cup water

For marinade

  • 1/2 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • Salt and white pepper

For blanching

  • Water for boiling
  • 4 stalks celery cut into bite-sized pieces diagonally
  • 1 small bell pepper diced
  • Ice water

For stir-fry

  • 1 1/2 tablespoons vegetable or peanut oil
  • 2 slices ginger minced
  • 1 green onion chopped
  • 1/4 teaspoon sugar
  • 2 teaspoons oyster sauce
  • 3/4 cup roasted cashews
  • Salt and pepper

Instructions
 

  • Combine the ingredients for soaking, and immerse the shrimp. Cover and refrigerate for 2 hours.
  • Remove from refrigerator, drain and rinse well with cold water. Drain, and pat dry with paper towels.
  • Mix the ingredients for the marinade together. Add the shrimp, and set aside.
  • Boil just enough water to cover the celery and bell pepper in a pot. Blanch the vegetables by immersing them in boiling water for just 30 seconds. Lift them out of the water and quickly immerse them in ice water. Drain, and set aside.
  • Heat a wok over medium heat. Swirl in the oil and add the ginger and green onion. Stir-fry for 1 minute.
  • Turn the heat up to high and add the shrimp.
  • When the shrimp turn pink, add the blanched vegetables.
  • Mix in the sugar, oyster sauce, and cashews, and cook just to heat through.
  • Season with salt and pepper, according to taste.
