Ingredients
  

Shrimp spread

  • 1/2 pound medium-sized fresh shrimp peeled and deveined
  • 1 tablespoon ginger peeled and sliced
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice wine
  • 1 large egg white

Other ingredients

  • 1/4 cup Mexican yam bean or jicama peeled and chopped into 1/8-inch pieces
  • 2 tablespoons cilantro finely chopped
  • 2 scallions without leaves, finely chopped
  • Salt and pepper to taste
  • 6 cups vegetable oil
  • 1 loaf white bread cut into 12 slices and flattened
  • 1/4 cup sesame seeds

Instructions
 

  • In a food processor, blend shrimp spread ingredients until paste-like but not smooth. Pour into a bowl, then mix in yam bean, cilantro, and scallions. Season with salt and pepper, to taste.
  • Heat oil in a large deep pan over medium-high heat until temperature is 375 °F.
  • Meanwhile, coat bread slices with shrimp spread entirely on one side. Top with sesame seeds. Lightly press seeds onto slices.
  • Deep fry slices 2 at a time, sides with shrimp spread facing down. Cook for 1 minutes, flip, then cook for another 30 seconds. Place slices onto a plate lined with paper towels.
  • Cut fried slices diagonally to form 2 triangles each. Serve.
